Beautiful sweet, crisp snow peas are also called a mangetout which means eat everything in French. The snow pea was developed in China thousands of years ago and is still used in Chinese cuisine today. Like green peas, they are an excellent source of thiamine, niacin and vitamin C; a good source of fibre, phosphorous and iron. Remove the tough strings removed before being blanched very briefly and seasoned or cooled and used with dipping sauces. Snow-peas can also be shredded and added raw to salads. Store in the crisper of your fridge.
