Mrs Payne's Smoked Trout is sourced from the Alexandra - Thornton district of Victoria from a trout farm located along the side of the Goulburn river. The fish is smoked to a traditional Dutch recipe in a computerized hot smoker. Eucalyptus wood chips give the trout its unique yet subtle smoked flavour. Mrs Payne started in 1994 in Bright by Mr and Mrs Payne using local produce from the area.
