Description

The Jap Pumpkin is a Japanese variety grown in Australia - the most common being the Ken's Special. The have a golden yellow flesh. Like all pumpkins, they are an excellent source of vitamin A and a moderate source of vitamin C, folate and pantothenic acid. Japs have a very sweet taste. It is said to resemble sweet potato in texture and taste. It is simmered in sweetened coconut milk as a warm dessert – often with tapioca pearls. The Thais hollow it out, fill the cavity with a duck egg custard and steam it. Store on a rack in a cool, well ventilated, dry place. Store cut pumpkin wrapped in clear plastic in the crisper for 1 week.
