Thyme is often combined with marjoram, parsley and bay leaves for the classic bouquet garni. It has a strong flavour that is terrific for stuffings, chicken and beef. Small amount of Thyme are great in herb breads and vegetables. It is an essential ingredient for many Creole dishes of New Orleans. Thyme leaves will fall off the stem as they are cooked. So you can cook with the whole cutting and remove the stems later. To keep fresh thyme fresh, it should be kept immersed in cold water for use in about 1 week. Alternately, you can dry thyme by hanging bunches of it in an airy, shady place, after which the leaves crumple off easily. Microwaves can also be used to dry thyme.
